Ingredients:
200 grams of sugar (1 cup)
150 grams of soft butter
3 eggs
1 teaspoon vanilla extract
210 grams of Sugat self-raising flour (1/2 cups)
¼ teaspoon of salt
1 tablespoon lemon zest
125 grams of 5% cheese (1/2 cup)
For coating: 80 grams of powdered sugar
2-3 tablespoons of lemon juice
Instructions:
1. Heat the oven to 170 degrees and grease a baking tray.
2. Beat butter and sugar together in a mixer for about two minutes, until the butter becomes clear. Add the eggs gradually. Mix self-raising flour, salt and lemon zest in a medium bowl. Add vanilla extract, half of the flour mixture and half of the cheese to the mixer until the mixture is uniform, then add the rest. It is important to mix only until the batter is uniform and not over.
3. Pour the batter into the mold. Bake for about 50 minutes or until a toothpick comes out of the center of the cake dry. Cool for at least 10 minutes. Transfer the cake to a rectangular serving plate.
4. For the coating: in a small bowl, mix powdered sugar with a tablespoon of lemon juice to create a slightly liquid coating. If necessary, add more lemon. Spread the frosting over the warm cake. Cool for at least 20 minutes at room temperature and serve.
