Rotem Liberzon takes kohlrabi and red onion and loooooots of herbs, adds canned beans on the way to making a quick and perfect salad.
Ingredients:
A whole kohlrabi, peeled and grated
A bunch of arugula, coarsely chopped
Red onion, thinly sliced
White and brown beans, drained
A whole bunch of cilantro, finely chopped
Zest of one lemon
Juice of one lemon
Olive oil
Salt
Crushed hot pepper to taste
Preparation instructions:
Mix all the ingredients together, season as much as you like (it’s best to start with a little seasoning and increase the flavors as needed), and serve.
