The base of this cake is a rice pudding, known in some places as arz con leche or sotlach - a sweet and warm dessert of rice cooked with milk in the texture of a pudding.
In this version from Hungarian cuisine, the sweet pudding is combined with egg batter and baked as a soft and wonderful orange-scented cake without a drop of flour. A simple and wonderful cake with coffee during Passover and also for those who avoid gluten.
Hungarian orange-scented rice cake
Recipe by: Avivit Periel Avichai. 30 minutes work, 70 minutes total, easy to prepare, 2 English cakes.
Ingredients for the recipe:
1 liter of milk
1 cup of Persian rice
5 tablespoons of sugar
Grating an orange from a whole orange
2 tablespoons of butter
A pinch of salt
4 egg yolks
4 proteins
Method of preparation:
How do you make Hungarian orange-scented rice cake?
1. Heat an oven to 180 degrees.
2. Cook rice in milk with a pinch of salt over low heat for 20-25 minutes, while stirring.
3. Remove from heat, add egg yolks, orange peel and butter and mix well.
4. Whip the egg whites and sugar to a firm foam.
5. Using a spatula, fold the foam into the rice - work in folding motions until all the foam is absorbed into the rice and milk mixture.
6. Transfer to 2 English cake pans lined with baking paper and bake for about 35 minutes.
